Our Story
Our Story – Allora Gelato
It all started in 2014 on the sun-soaked streets of Capri. While wandering the island, I caught the scent of something warm and sweet—like fresh bakery, like home. I turned a corner and found myself in front of a tiny gelateria, a line of 60+ people stretching down the street. Curious, I joined them, watching as one woman scooped gelato while another pressed fresh waffle cones, their aroma filling the air.
And then, I took my first bite.
That warm, crisp cone, the impossibly smooth gelato—this wasn’t just dessert; it was an experience.
Right then and there, I told my friends: "I’m going to open a gelato shop."
And then, as dreams often do, it tucked itself away—for a little while.
A Journey Beyond Gelato
Fast forward ten years, and my fiancé, Ciara, and I made a bold decision: we sold everything we owned and traveled the world for 1.5 years. Not just to explore, but to immerse ourselves in the craft of gelato-making—studying the techniques, textures, and traditions that have defined it for generations.
But our journey didn’t stop there. In places where gelato was rare, we discovered flavors that would reshape how we thought about dessert.
In Morocco and Turkey, we tasted richness beyond dairy—spices, fragrant teas, and roasted nuts. Layers of flaky, honey-soaked baklava showed us how texture can transform something simple into something extraordinary. The cooling pour of Moroccan mint tea, served high into delicate glasses, revealed that flavor is more than taste; it’s an experience.
Southeast Asia redefined sweetness for us. We drank coconut water so crisp it felt like nature’s sorbet, tasted dragon fruit bursting with honeyed brightness, and fell for jackfruit’s bold, tropical richness. But the real surprise? A Cambodian dessert of sweet potato simmered in coconut milk—simple, yet unforgettable. And in Singapore, where tradition and innovation collide, we saw how nostalgia and modernity could exist side by side—something we knew we wanted to bring into Allora.

Some flavors found us along the way—Lemon Lavender, Coconut Almond Crunch, and Ricotta & Croatian Fig, inspired by a tiny gelateria in Split, Croatia. Others were perfected through obsession—like the deep, velvety Dark Chocolate from a Roman favorite, the tangy Greek Yogurt gelato we stumbled upon in Athens, and our Bali Coconut Sorbet, carrying the essence of Tukies Ice Cream in Ubud, Bali (coming this summer).

Allora—More Than Just Flavors
But Allora is more than flavors—it’s a feeling.
The music—inspired by a chic gelateria in Bratislava, Slovakia.
The tucked-away charm—drawn from a hidden gem in Matera, Italy. The warm, ambient glow—influenced by the effortless elegance of Bali and Tulum, a setting where time slows down and moments linger. And then, there’s the way we serve our gelato—just as a century-old gelateria in Italy still does. You order first, then choose your flavors, making the experience seamless and true to tradition.
Coming Full Circle
As if written by fate, our journey led us back to Capri—this time, for something even bigger. One evening, after a swim near The Faraglioni, I proposed, surrounded by the same breathtaking beauty that first sparked this dream.
Through it all, Ciara was my compass. The one who reminded me—no matter what idea I drafted, it always led back to Allora. One day, she grabbed my shoulders, looked me straight in the eye, and said:
"Every plan ends up here. Stop talking about it. Let’s make it happen."And from that moment on, there was no turning back.
The Dream, Realized
Then, it happened.
We unlocked the doors, and the smell of fresh waffle cones filled the air. The first customers walked in, their eyes lighting up as they tasted their first bite.
And in that moment, we knew—this wasn’t just a shop. This was everything we had dreamed of.
At Allora, we want to bring back the magic of gelato—the kind that makes you feel like a kid again, no matter your age. The kind that sparks a smile before you even take a bite. The kind that feels like it’s always been here, just waiting for you to find it.
And now, we finally get to share it with you.

Allora: A Name Rooted in Timeless Tradition
It’s a word you’ll hear often in Italy. A casual filler, an unhurried pause, a moment of anticipation before something wonderful. “Allora...” a nonna might say, stirring a pot of slow-simmered sugo. “Allora...” a barista sighs, setting down an espresso with an approving nod. But dig a little deeper, and you'll find that "allora" also means “back when”—a phrase that tugs at nostalgia, summoning memories of how things used to be. And that’s exactly why we chose it.
At Allora Gelato, we are not here to reinvent what was already perfected generations ago. We are here to preserve, to honor, to bring back the experience of gelato as it was meant to be. Back when cones were pressed and baked in-house, their warm scent carrying down the street before you even reached the shop. Back when gelato was churned fresh daily, right before your eyes, using the legendary Cattabriga Effe, the very same machine that revolutionized gelato-making in Italy over a century ago. Back when flavors were crafted from real, honest ingredients—pistachios from Bronte, Sicilian almonds, fragrant vanilla pods—not artificial colorants or preservatives.
We believe a great gelateria should feel as classic as a pair of well-worn leather shoes, something that never loses its charm no matter how many years pass. A place you can return to decades later and still find the same meticulous craftsmanship, the same dedication to quality, the same sense of time standing still.

We source with intention, selecting organic whenever possible to create gelato that’s as honest as it is indulgent. Our rich Belgian cacao, Sicilian pistachios, and sun-ripened figs from Croatia bring depth and complexity to every scoop. We balance sweetness with honey harvested from Arizona’s golden fields, supporting local artisans, and brighten flavors with organic lemons, fresh basil, and fragrant lavender from France.
